I don’t know about you, but I can easily eat breakfast for dinner anytime. I love breakfast. I also love Trader Joe’s. So for today’s BFF: B’s Food Friday, I decided to combine them with this delicious recipe from their website! I thought I’d share it with all of you breakfast fans as well! Enjoy!
Joe’s Typical Breakfast
Serves 3-4 Cooking Time 15 Minutes
INGREDIENTS

3 Links TJ’s Fully Cooked Sun-Dried Tomato Chicken Sausage, sliced

1 packet TJ’s Organic Frozen Brown Rice, heated

1 can TJ’s Organic Black Beans, drained

1 Tbsp TJ’s Tomato Paste or TJ’s Marinara

1 Tbsp Water
-
2 Handfuls TJ’s Baby Spinach
-
3-4 TJ’s Eggs, Fried
-
TJ’s Unsalted Butter or TJ’s Canola Oil Spray for frying eggs

1 TJ’s Avocado, diced
-
2 squirts TJ’s Sriracha Sauce
-
1/4 teaspoon TJ’s Sea Salt, or to taste
-
1/4 teaspoon TJ’s Ground Black Pepper, or to taste
DIRECTIONS
In a medium frying pan on medium heat, combine sausage, rice, black beans, tomato sauce, water and spinach. Stir 2-3 minutes until heated. Taste and add seasoning as desired. Divide portions into serving bowls and top with a fried egg, avocado and a squirt of Sriracha.
