BFF: Leprechaun Pie

Get in the spirit of St. Patrick’s Day with this quick and easy recipe for Leprechaun-Pie! While we wouldn’t want to make this an every day treat, once a year to celebrate the Irish is just fine. Thank you nightstarsky of Spark People for sharing this recipe!

Ingredients:

1 reduced fat graham cracker crust

8 oz tub fat free whipped topping, thawed

1 box sugar free/fat free pistachio pudding

20 oz can crushed  no-sugar added pineapple in own juice

Directions:

Mix thoroughly the whipped topping, pudding powder and pineapple (including juice). pile into crust, chill and enjoy!
